These ice cream sandwiches are great for a quick pick me up snack; and can be kept in the freezer for weeks.
Step 1: In A large bowl; mix butter, brown sugar, granulated sugar and stir; then add milk, vanilla, salt and flour; stir until smooth. Add mini chip and stir.
Step 2: Line two 8 x 8 pans with parchment paper; that extends two inches on all sides of the pans ( this allows for the dough to be removed later).
Step 3: Press half the dough onto one pan until flat and even; repeat this process with the next pan and freeze for one hour; then remove.
Step 4: Allow ice cream to slightly soften and spread on one of the pans evenly. Then remove the dough from the other pan and flip onto ice cream and remove parchment paper; freeze for one to two hours.
Step 5: Remove from freezer cut into squares and enjoy.
