Although I guess everybody loves sweets, when it comes to medicated food, sometimes it’s just safer to try something different, because when you ‘suffer’ from sweet tooth one cookie or cupcake is never enough. More savoury or more salty kinds of dishes with medical value work as good as a chocolate bar or some other baked goodies.
So when I feel a bit stress-down I like to treat myself with some good food for a better mood. We had burgers in mind for eating later, so I was looking for an idea of how to infuse mine. For me there is nothing better than a meal loaded with vegetables, so that’s how I created medicated broccoli dip- pesto. It’s perfect for burgers, sandwiches, also good for tortillas, pastas, addition to some salads or even you can munch it with some fresh veggies.
Cook the chopped broccoli in salted water for about 3/4 minutes. Preheat the pan without the addition of any oil, roast almonds and sunflower for about a minute until they start to turn lightly golden brown.
To a big bowl add the prepared broccoli, roasted almonds and sunflower seeds. Next add canna oil, olive oil, garlic, chilly and fresh rosemary, as well as the juice of half a lime. Shortly blend everything.
Season to taste with salt and pepper.
