So, get ready to dive into this Middle Eastern Biryani Stuffing made easy with an Instant Pot, or you can just use your regular stove.

It serves 4, so you can share with your buds or have leftovers for the next round.

Ingredients:

For the Biryani Spice Mix:

  • 1 tsp clove
  • 1 tsp coriander
  • 2 tsp black pepper
  • 1/2 tsp cinnamon
  • 1/2 tsp paprika
  • 1/2 tsp cardamom
  • 1/2 tsp ginger
  • 1/2 tsp nutmeg
  • 2 tbsp salt

For the Stuffing:

  • 1 cup vermicelli
  • 1/2 cup oil, plus extra as needed
  • 1 large onion, chopped
  • 1 lb beef or chicken breast, cubed
  • 1/2 cup water or beef/chicken broth
  • 2 potatoes, cubed
  • 2 cups raisins
  • 1 bag frozen mixed veggies
  • 5 hard-boiled eggs, halved

Instructions:

  1. Spice Mix Prep: Mix up clove, coriander, black pepper, cinnamon, paprika, cardamom, ginger, nutmeg, and salt in a bowl. Put it aside for now.

  2. Vermicelli Vibes: Fire up your Instant Pot's sauté mode, heat half a cup of oil, and brown the vermicelli with a sprinkle of our spice mix. Once it's got that golden glow, take it out and set it aside.

  3. Potato Party: In the same pot, maybe toss in a bit more oil if it's looking dry, and get those potato cubes in there. Give them a dash of the spice mix and cook 'til they're golden and tender. Scoop 'em out and keep 'em with the vermicelli.

  4. Meat Moment: Now, get your onions in the pot, cooking 'til they're soft and clear. Add your choice of meat, hit it with a good amount of the spice mix, and pour in the liquid. Seal the deal, set the Instant Pot to high pressure for 10 minutes, and then quick release the pressure.

  5. Mix Master: Bring back the vermicelli and potatoes, stir in the raisins, mixed veggies, and the rest of your spice mix. Mix it well, then top it gently with the egg halves.

  6. Low and Slow: Switch the Instant Pot to a low simmer, letting it all come together for about 30 minutes. Give it the occasional stir to avoid any stickiness.

Serving Suggestion: Plate this delightful Biryani stuffing over some fluffy white rice. It's the perfect way to balance the rich, aromatic flavors with a bit of simplicity. Ideal for when you're chilling and need that filling feast to keep the good times rolling.

Dig in and enjoy, crew! This one's sure to make your munchies moments all the more satisfying.
