Dad's Marijuana Pancakes

My dad had never been a great cook, or even a good one for that matter. The only thing I remember making for us when we were kids is pancakes on the weekends, which is not a very common thing back in Iraq, especially in the 80's. Something he learned when he went to school in Indiana University. 

My dad was diagnosed with cancer mid 2016 and passed away early 2017. Short time before he passed away, and despite his social morals, he surrendered to his pain and agreed, after a lot of convincing, to experimenting with Marijuana. I was excited that I will finally get high with my dad, which I think one of the best social activity every father and son should attempt.

I decided to make him his own recipe with a stoner twist. And I remember very well how he felt afterwards. I think it was the first time since he was diagnosed, and the last time before he passed away, that I saw him comfortable and relaxed. We watched a Recount. It's a two hours movie! For a cancer patient, it's a long time without feeling exhausted and wanting to lay down.

This recipe is in memory of my dad. I've never had his approval all my life, but I know he passed away proud of me. Rest in peace, Baba.

Ingredients

  • 1 1/2 cups all-purpose flour 
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 Large Egg
  • 1/4 cup THC infused butter (you can use our 1 Gram Cannabutter Recipe)
  • 1 1/2 cups milk (I prefer whole, but dairy or non-dairy, it's up to you)
  • 1 teaspoon vanilla extract

Making the Batter Instructions

  • Whisk flour, sugar, baking powder and the salt in a bowl
  • Melt the cannabutter in the microwave and set it aside
  • Warm up the milk, on the stove or in the microwave. You don't need it hot. You should be able to dip your finger in it for 10 seconds no problem. 
  • Whisk the egg, melted marijuana butter, the warm milk and the vanilla extract in a separate ball.
  • Create a well in the center of the flour mix
  • Now pour the butter and milk mixture into the well.
  • Whisk until everything is combined. The warm milk and melted cannabis butter will help to smooth the mixture with no lumps.

 Cooking the Marijuana Pancake Instructions

  • Heat a lightly buttered pan (better to use a little more of our THC infused butter) to medium-high heat
  • Wait for the pan to be hot enough, then pour a 1/4 cup of the batter onto the pan. 
  • When the top of the batter is bubbly, flip the hot cake over & cook on other side until lightly golden brown. That's cooking each side for 3-4 minutes. 

Enjoy with a drizzle of organic syrup and powder sugar. Or if you'd like to add potency to the meal, use our Cannabis Corn Syrup Recipe instead.
